Hamburger Eggplant Parmesan
Yield: 6 - 8 servings
Ingredients:
- 2 lbs. hamburger
- 1/2 onion, chopped
- 2 cloves garlic, minced
- 1 jar of your spaghetti sauce (not the smallest size, the next size up)
- 1 eggplants, medium
- 1 - 8 oz pkgs. Mozzarella slices (12 slices)
- 1/2 cup Parmesan cheese
Directions:
- Preheat oven to 375°
- Hamburger Sauce
- Brown meat with onion and garlic. Drain fat.
- Add sauce.
- Peel and slice eggplant into into 1/4-inch rounds.
- Layer eggplant, meat sauce, Mozzarella in a lightly greased 9x12 glass baking dish. Continue layers until ingredients are all in dish.
- Sprinkle Parmesan on top.
- Cover and place in oven for about 45 minutes.
- Remove foil and bake 15-20 minutes.
